Utilities & installation notes

Water & drainage

Extruders with water cooling and all cookers need supply and drain positions — planned before delivery, not after.

Gas or electric

ATA cookers run on gas; Italgi cookers and extruders are electric. Line sizing per model on the quote.

Flour handling

Extruders live best near dry storage with a dedicated prep surface for dies and cutters.

Commissioning

First extrusion run, die fitting, and cleaning walkthrough with your team are part of installation.

Technical questions we get weekly

Match the machine’s actual hourly output to your service window, not the headline extrusion number. Estro covers most single-restaurant programs; P17 and P35 step up to shop and multi-outlet volume. Bring your covers and menu — we’ll do the math on the quote.

Extruders push dough through bronze dies — rigatoni, spaghetti, fusilli. Ravioli, lasagna, and tagliatelle come off sheet-based machines. Many programs pair one of each; we spec the pair against your actual menu.

We do — the authorized distributor, with factory-trained technicians and genuine OEM dies, seals, and parts. Request service or enroll in a PM plan.
